Chilli Chicken Tray Bake

Ingredients:

For the chicken:

  • 4 skinless, boneless chicken breasts
  • 1/2 tablespoon ground coriander
  • 1/2 tablespoon ground cumin

For the vegetables:

  • 2 red bell peppers, sliced
  • 3 red onions, wedges
  • 2 cans (14.5 oz each) chickpeas, drained and rinsed
  • 4 large tomatoes, halved
  • 200g baby spinach

For the spices and seasoning:

  • 1 tablespoon ground cumin
  • 1 teaspoon chili flakes (optional)
  • Zest and juice of 1 lemon
  • 3 garlic cloves, crushed
  • Salt and pepper to taste

For serving:

  • 200g plain yogurt
  • 30g fresh parsley, chopped
  • Lemon wedges (optional)
