Ingredients:
- 1 pound broccoli florets
- 8 green onions, finely chopped
- 1 cup cherry tomatoes, halved or quartered
- 2 large eggs, beaten
- 400g Diced Chicken Breast
- 1 cup low-fat cottage cheese
- 3 cloves garlic, minced
- Salt and freshly ground black pepper
- 1/4 cup chopped fresh parsley
- 1 cup shredded reduced-fat cheddar cheese
Instructions:
- Boil broccoli florets in salted water for 2-3 minutes.
Drain and set aside. - In a large bowl, combine cooked broccoli, green onions, and cherry tomatoes.
- Brown the chicken in a large pan over a medium heat using a low calorie cooking spray.
Add a few tbsp of chicken stock onion and garlic. Cook for 1 – 2 minutes. - In a separate bowl, whisk together eggs, cottage cheese, garlic, salt, pepper, and parsley.
- Pour the egg mixture over the vegetable mixture in the bowl and stir gently to combine.
- Transfer everything into a baking dish.
- Sprinkle with shredded cheddar cheese.
- Bake in a preheated 425°F (220°C) oven for 15-20 minutes, or until set and golden brown.
- Let cool slightly before serving.
