Ingredients:

  • 1 pound broccoli florets
  • 8 green onions, finely chopped
  • 1 cup cherry tomatoes, halved or quartered
  • 2 large eggs, beaten
  • 400g Diced Chicken Breast
  • 1 cup low-fat cottage cheese
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley
  • 1 cup shredded reduced-fat cheddar cheese

Instructions:

  1. Boil broccoli florets in salted water for 2-3 minutes.
    Drain and set aside.
  2. In a large bowl, combine cooked broccoli, green onions, and cherry tomatoes.
  3. Brown the chicken in a large pan over a medium heat using a low calorie cooking spray.
    Add a few tbsp of chicken stock onion and garlic. Cook for 1 – 2 minutes.
  4. In a separate bowl, whisk together eggs, cottage cheese, garlic, salt, pepper, and parsley.
  5. Pour the egg mixture over the vegetable mixture in the bowl and stir gently to combine.
  6. Transfer everything into a baking dish.
  7. Sprinkle with shredded cheddar cheese.
  8. Bake in a preheated 425°F (220°C) oven for 15-20 minutes, or until set and golden brown.
  9. Let cool slightly before serving.
  10. Serve with a side of crusty bread or a green salad.
