Spicy Chicken and Veggie Quesadillas

Ingredients:

  • 1/2 onion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 2 cups cooked chicken, shredded
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/2 cup salsa
  • 1 green onion, thinly sliced
  • 1 cup shredded cheese blend (cheddar, Monterey Jack, or a combination)
  • 2 large flour tortillas

Instructions:

Prep the Filling:

  1. In a large skillet over medium heat, cook the onion and bell peppers until softened.
  2. Add the chicken, spices, and green onion. Cook until heated through.
  3. Stir in the salsa.

Assemble the Quesadillas:

  1. Place one tortilla on a large skillet over medium heat.
  2. Sprinkle half the cheese over the tortilla.
  3. Top with the chicken mixture.
  4. Cover with the remaining cheese and the second tortilla.

Cook the Quesadillas:

  1. Cook until the bottom tortilla is golden brown and the cheese is melted.
  2. Flip and cook the other side until golden brown.

Serve:

  1. Cut into wedges and serve immediately with your favorite dipping sauce, such as sour cream or guacamole.
