Spicy Chicken and Veggie Quesadillas

Ingredients:
- 1/2 onion, finely chopped
- 1/2 red bell pepper, finely chopped
- 1/2 green bell pepper, finely chopped
- 2 cups cooked chicken, shredded
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1/2 cup salsa
- 1 green onion, thinly sliced
- 1 cup shredded cheese blend (cheddar, Monterey Jack, or a combination)
- 2 large flour tortillas
Instructions:
Prep the Filling:
- In a large skillet over medium heat, cook the onion and bell peppers until softened.
- Add the chicken, spices, and green onion. Cook until heated through.
- Stir in the salsa.
Assemble the Quesadillas:
- Place one tortilla on a large skillet over medium heat.
- Sprinkle half the cheese over the tortilla.
- Top with the chicken mixture.
- Cover with the remaining cheese and the second tortilla.
Cook the Quesadillas:
- Cook until the bottom tortilla is golden brown and the cheese is melted.
- Flip and cook the other side until golden brown.
Serve:
- Cut into wedges and serve immediately with your favorite dipping sauce, such as sour cream or guacamole.
