To make the banana and oat bake, preheat your oven to 190°C (375°F) or 170°C (fan oven). Grease a small ovenproof dish with some cooking oil spray.
In a bowl, mix together the oats, mashed banana, baking powder, yogurt, vanilla extract, ½ tablespoon of sukrin gold, and egg. Whisk the ingredients until well combined.
Pour the mixture into the ovenproof dish and sprinkle the remaining ½ tablespoon of sukrin gold on top.
Bake the mixture in the oven for 40 minutes or until it’s set and lightly golden.
Once the banana and oat bake is ready, you can serve it with a heaped spoonful of plain yogurt, sliced banana, and a tablespoon of maple syrup drizzled on top. Alternatively, you can serve it with any other toppings of your choice.
