Tuna Cake A Great Recipe

INGREDIENTS:

For the fishcakes:

  • 400g mashed potato
  • 2 x tins tuna in spring water, drained
  • 2 tbsp capers, drained and rinsed
  • 1/2 small pack fresh parsley
  • 3 boiled eggs, chopped
  • 6 spring onions, chopped
  • juice of ½ lemon

For the salsa:

  • 2 spring onions chopped
  • 100g of sweetcorn, drained
  • 1 large tomato, chopped
  • juice of ½ lemon
