Ingredients:
- 2 pounds lean stewing beef (cubed)
- 1 large onion, chopped
- 3 carrots, cut into 1-inch pieces
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1 cup beef broth
- 3 tablespoons tomato paste
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried parsley
- 1 tablespoon cornstarch
- Fresh parsley, chopped, for garnish
- Salt and black pepper to taste

Instructions:
- Sear the Beef: Heat a large pot or Dutch oven over medium-high heat. Spray with cooking spray. Add the beef and cook in batches until browned on all sides. Remove and set aside.
- Sauté Vegetables: Add the onion, carrots, bell pepper, and garlic to the pot. Cook and stir until softened, about 5 minutes. If the vegetables start to stick, add a splash of water to deglaze the pan.
- Simmer: Return the beef to the pot. Add balsamic vinegar, brown sugar, beef broth, tomato paste, thyme, parsley, salt, and pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 1.5-2 hours, or until the beef is very tender.
- Thicken Gravy: In a small bowl, whisk together cornstarch with 2 tablespoons of cold water to create a slurry. Gradually whisk the slurry into the simmering beef mixture. Cook and stir until the gravy has thickened slightly.
