Ingredients:
- 6 lean beef stewing steaks (visible fat trimmed)
- 1 onion, chopped
- 200ml Guinness stout
- 2 beef stock cubes, crumbled
- 2 tablespoons Worcestershire sauce
- 3 sprigs fresh thyme
- 6 carrots, cut into chunks
- 150g savoy cabbage, shredded
- 2 green apples, cored and cut into matchsticks
- 3 spring onions, sliced
- Bunch fresh chives, snipped
- 1 teaspoon creamed horseradish
- 2 tablespoons fat-free vinaigrette
- Juice of 1 lemon
- Small handful fresh parsley, finely chopped
Instructions:
- Brown the Beef: Preheat oven to 180°C (160°C fan/gas mark 4). Heat a large skillet over high heat. Brown the beef steaks on both sides in batches. Transfer the browned beef to a deep baking dish.
- Make the Stew Base: Add the chopped onion to the skillet and cook until softened. Pour in 300ml water, Guinness, beef stock cubes, Worcestershire sauce, and thyme sprigs. Bring to a boil. Pour this liquid over the beef in the baking dish.
- Slow Cook: Cover the baking dish tightly with foil. Bake for 2 hours. Add the carrots to the dish, cover, and continue baking for 1-2 more hours, or until the beef and carrots are very tender.
- Prepare the Slaw: In a bowl, combine the shredded cabbage, apple matchsticks, sliced spring onions, and snipped chives. Whisk together the horseradish, vinaigrette, and lemon juice in a small bowl. Pour the dressing over the slaw and toss to coat.
