Turn on your Ninja Foodi and select SEAR SAUTE on MED/High – let that preheat a few minutes.
While preheating, season your chicken generously with salt/pepper on both sides.
Add EVOO to Foodi pan and toss in your chicken! (Remember…” no color no flavor!”)
Sear chicken about 3 to 4 minutes per side and set it aside, removing it from the foodi. (note: we are not trying to cook it through at this point, just getting a nice sear!)
Next, reduce sear/saute to Medium. Add garlic and let that simmer about one minute.
Now add in the following: red pepper flakes, thyme, broth and heavy cream… whisking constantly. Let this simmer for 5 minutes. (If after a couple min you feel it is cooking to fast, reduce it to Med/Low.)
Next, add your sundried tomato pesto and parmesan cheese – stir stir stir!
Last, switch your foodi over to the BAKE setting. Select 375 and set the time to +/-10 minutes.
Return your chicken to the pan and cover it with the sauce and shut the lid, letting the baking cycle begin.
Check the temp of your chicken during cooking to ensure it is done and adjust a minute or two +/- as needed. When the juices run clear it is done… but if you are unsure then use your meat thermometer to confirm (165 degrees!
