Ingredients:
- Add, stir and combine your ingredients in this order for best results…
- 1T EVOO (Extra Virgin Olive Oil)
- 2 lbs Chicken (Boneless/skinless breasts or skin on thighs work great too)
- 1 T Fresh Thyme
- 1 tsp. Crushed Red Pepper flakes
- ¾ cup Chicken Broth
- 2 cloves Minced Garlic
- ½ cup Heavy Cream
- 1/3 cup Sun Dried Tomato Pesto (you could substitute ½ cup sundried tomatoes too)
- ½ Cup Grated Parmesan Cheese (fresh!)
- Salt/Pepper to taste (I always keep my salt light, and double up on my pepper!)
- 1 tsp Dried Basil (fresh is really the best if you have it… just take a few leaves and stir them in)
- Optional: Cornstarch/water to thicken sauce if needed (or use whatever your favorite thickening agent is!!
