Ingredients:
- 1 medium cauliflower
- 2 egg whites
- 1/2 white onion, diced
- 1 tablespoon minced garlic
- 1 tablespoon lemon juice
- 1/2 tablespoon Italian seasoning
- 1/2 tablespoon spicy brown mustard
- 1/4 teaspoon baking soda
- 1/4 cup gluten-free oat flour (or almond flour)
- 1 tablespoon coconut flour
- 1 tablespoon tapioca flour
- Salt and pepper to taste
- Cooking spray
Instructions:
- Prep the Cauliflower: Bring a pot of water to a boil. Clean and roughly chop the cauliflower.
- Add to boiling water and simmer for 8-10 minutes, or until fork-tender. Drain thoroughly.
- Blend it Up: In a food processor or blender, pulse the cauliflower until it forms a smooth liquid. Add the remaining ingredients and blend until completely combined.
- Cook the Pancakes: Heat a skillet over medium heat. Spray with cooking spray. Drop 1/4 cup of batter per pancake onto the skillet. Cook for 5 minutes per side, or until golden brown.
