Hunter’s chicken Recipe

This recipe offers a delicious and Slimming  take on the classic pub dish. Tender chicken breasts are wrapped in bacon and smothered in a flavorful tomato sauce, then baked to perfection.

Ingredients:

  • 1½ tbsp red wine vinegar
  • 1½ tsp sweet or hot smoked paprika
  • 1½ tsp garlic granules
  • 2 tbsp Worcestershire sauce
  • 2 x 400g cans chopped tomatoes
  • 4 smoked bacon medallions, visible fat removed
  • 4 skinless and boneless chicken breasts
  • 200g grated mozzarella
  • 400g green beans, trimmed
  • ½ small pack fresh parsley, chopped, to serve
  • 4 microwaved or oven-cooked baking potatoes, to serve

Instructions:

  1. Preheat your oven to 200°C/ fan 180°C/gas 6.
  2. Put the vinegar, paprika, garlic, Worcestershire sauce and chopped tomatoes in a large, shallow, flameproof casserole dish.
  3. Put it over a medium-high heat, bring to a simmer and cook for 20 minutes, stirring occasionally. Season to taste.
  4. At the same time, gently bash the bacon medallions to flatten them out and lengthen slightly. Stretch a piece of bacon over each chicken breast.
  5. Nestle the chicken breasts into the sauce and spoon a little sauce over the top.
  6. Divide the mozzarella over the chicken breasts and bake in the oven for 20 minutes, or until the chicken is cooked through.
  7. When the chicken’s almost ready, steam or boil the green beans for 3-4 minutes, then drain.
  8. Scatter the parsley over the chicken, then divide the chicken and sauce between 4 plates, and serve with the beans and baked potatoes.

Tips:

  1. If you don’t have lean bacon, you can use turkey bacon or even just wrap the chicken breasts in a strip of foil.
  2. You can also add some chopped mushrooms or peppers to the sauce for extra flavor.
  3. If you want to make this dish even more filling, you can serve it with a side of brown rice or wholemeal pasta.

Hunter’s Chicken in the Air Fryer

  • Yields: 4 servings
  • Prep Time: 15 minutes
  • Cook Time: 20-25 minutes

Ingredients:

  • 4 skinless, boneless chicken breasts
  • 8 slices of lean bacon, with visible fat removed
  • 1 onion, diced
  • 1 garlic clove, minced
  • 1 can chopped tomatoes
  • 1 tbsp Worcestershire sauce
  • 1 tbsp balsamic vinegar
  • 1 tsp paprika
  • 1 tsp sweetener (optional)
  • Salt and pepper to taste
  • 150g grated light cheese (Healthy A choice)
  • Cooking spray

Instructions:

  1. Prepare the Chicken: Wrap each chicken breast in two slices of bacon, securing with toothpicks if needed.
  2. Make the Sauce: In a small bowl, combine the diced onion, minced garlic, chopped tomatoes, Worcestershire sauce, balsamic vinegar, paprika, sweetener (if using), salt, and pepper. Stir well.
  3. Air Fry the Chicken:
  4. Spray the air fryer basket with cooking spray.
  5. Arrange the bacon-wrapped chicken breasts in a single layer in the basket.
  6. Air fry at 190°C (375°F) for 15-20 minutes, or until the chicken is cooked through and the bacon is crispy. Flip the chicken halfway through cooking for even browning.
  7. Finish and Serve:
  8. While the chicken is air frying, pour the tomato sauce into a small oven-safe dish.
  9. Once the chicken is cooked, transfer it to the dish with the sauce.
  10. Top with grated cheese.
  11. Broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  12. Serve immediately with a side of steamed vegetables or a salad
