Light and Lean Cornish-Style Quorn Pasties

Instructions:

  1. Preheat your oven to 190°C/fan 170°C/gas 5.
  2. Sauté the onion: Spray a non-stick frying pan with low-calorie cooking spray and cook the onion over medium heat until golden brown. Season lightly and set aside to cool.
  3. Prepare the filling: Boil the swede and potatoes for 3 minutes, then drain and let cool. Combine the cooled onion, swede, potatoes, Quorn, and bouillon powder in a large bowl. Mix well.
  4. Create the pastry: Spray a baking tray with low-calorie cooking spray. Mix the flour with 2 teaspoons of cold water to form a paste.
  5. Assemble the pasties: Work with one filo sheet at a time, keeping the rest covered to prevent drying. Fold a sheet in half and cut out two discs using a 22cm plate. Brush the edge of one disc with the flour paste, place the second disc on top, and press firmly to seal.
  6. Fill the pasties: Divide the filling equally among the pastry discs, leaving a 2.5cm border. Brush the edges with the flour paste, fold the pastry over, and seal tightly. Place on the prepared baking tray.
  7. Bake: Spray the pasties with low-calorie cooking spray and bake for 25 minutes, or until golden brown and crispy.
  8. Serve: Enjoy your homemade Cornish-style pasties with a refreshing salad or steamed vegetables.
