Ingredients:
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 pound lean ground beef (90/10 or leaner)
- 2 green chilies, seeded and thinly sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Pinch of cayenne pepper
- 1 red bell pepper, seeded and chopped
- 1 yellow bell pepper, seeded and chopped
- 4 plum tomatoes, chopped
- 1 1/2 cups beef broth
- 1 can (15 ounces) mixed beans, rinsed and drained
- Fresh cilantro, chopped, for garnish
- Cooked white rice and lime wedges, for serving
Instructions:
- Sauté the Aromatics: In a large skillet or pot, cook the onion and garlic over medium heat until softened.
- Brown the Beef: Add the ground beef to the pot and cook, breaking it up with a spoon, until browned.
- Simmer the Chili: Stir in the green chilies, cumin, coriander, paprika, cayenne pepper, bell peppers, tomatoes, and beef broth. Bring to a boil, then reduce heat and simmer, covered, for 2-3 hours, or until the flavors have blended and the chili has thickened.
- Add the Beans: Stir in the drained beans and heat through for an additional 10-15 minutes.
