Instructions:
- Spray a large, non-stick frying pan with fry light. Place over a high heat and when almost smoking, add the garlic, red chilli and squid and stir-fry for 1-2 minutes or until the squid is just cooked through. ( Do not over- cook or it will become rubbery)
- Remove from the heat and add the lemon juice and seasoning to taste
- Toss to mix well
- Divide the rocket leaves between four plates and top with the squid mixture and any of the pan juices Serve immediately
