Grilled Calamari and Rocket Salad

Instructions:

  1. Spray a large, non-stick frying pan with fry light. Place over a high heat and when almost smoking, add the garlic, red chilli and squid and stir-fry for 1-2 minutes or until the squid is just cooked through. ( Do not over- cook or it will become rubbery)
  2. Remove from the heat and add the lemon juice and seasoning to taste
  3. Toss to mix well
  4. Divide the rocket leaves between four plates and top with the squid mixture and any of the pan juices Serve immediately
