Introduction: This vibrant and cheesy bake is a fantastic way to enjoy your Speed Foods (courgette and carrot) on Slimming World. It’s packed with flavour and makes a great side dish or light meal.

Ingredients:

  • 2 large Courgettes (Zucchinis), grated
  • 2 large Carrots, grated
  • 1 medium Onion, finely chopped (optional, but adds flavour)
  • 2 cloves Garlic, minced
  • 4 large Eggs
  • Cheese Options (Crucial for Slimming World):
  • Healthy Extra A Option (Near Syn Free): 60g Reduced Fat Cheddar, grated (weighed portion)
  • Lower Syn Option: 25g Full Fat Cheddar or other hard cheese, grated (Syns to be counted)
  • 1 tbsp Fresh Parsley, chopped (or 1 tsp dried parsley)
  • Salt and Black Pepper to taste
  • Low-calorie cooking spray

Instructions:

  • Preheat oven: Preheat your oven to 180°C (160°C Fan/Gas Mark 4).
  • Prepare Vegetables: Grate the courgettes and carrots. If using, finely chop the onion. Mince the garlic.
  • Combine Ingredients: In a large bowl, combine the grated courgette, carrot, onion (if using), and minced garlic. Season generously with salt and pepper. Squeeze out any excess moisture from the grated courgette using your hands or a clean tea towel. This will prevent the bake from being too watery.
  • Add Eggs: Crack the eggs into the vegetable mixture and mix well to combine.
  • Add Cheese:
  • Healthy Extra A Option: Grate your measured 60g of reduced-fat Cheddar and stir it into the mixture. Ensure you are not using any other Healthy Extra A in this meal.
  • Lower Syn Option: Grate your chosen amount of full-fat cheese and stir it in. Remember to calculate the Syns for the amount you use.
  • Prepare Baking Dish: Lightly grease a round or oval baking dish (approx. 20cm diameter) with low-calorie cooking spray.
  • Bake: Pour the vegetable mixture into the prepared dish. Bake in the preheated oven for 30-40 minutes, or until golden brown and set. The centre should be firm to the touch. Check after 20 minutes and cover loosely with foil if it’s browning too quickly.
    Garnish and Serve: Once cooked, sprinkle with fresh parsley. Serve warm.
