Ingredients:
For the Cookies:
- 8 oz of 100% pure cocoa powder

- 3 large egg yolks, room temperature
- 3 large egg whites, room temperature
- 3 level tbsp sweetener granules
- 1 cup of light aerosol cream whipped (optional)
For the Chocolate Coating:
- 8 ounces dark chocolate, chopped
- 1 tablespoon vegetable oil
Instructions:
Prepare the Cookie Base:
- In a medium bowl, whisk together the cocoa powder and butter until smooth.
- Gradually beat in the egg yolks, one at a time, mixing well after each addition.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture.
Assemble the Cookies:
- Scoop the cookie dough onto a baking sheet lined with parchment paper.
- Bake in a preheated oven at 350°F (175°C) for 10-12 minutes, or until set.
- Let cool completely on the baking sheet before removing.
Make the Chocolate Coating (Optional):
- Melt the chocolate and vegetable oil in a double boiler or in a microwave-safe bowl.
- Dip the cooled cookies into the melted chocolate, allowing excess to drip off.
- Place the dipped cookies on a wire rack to set.
