Instructions:
TO MAKE THE SWEET AND SPICY APRICOT GLAZE
- Combine apricot preserves, mustard, chili powder, and soy sauce in a small saucepan and whisk to combine.
- Heat over low until slightly thickened, about 5 to 10 minutes.
- Remove from heat and set aside.
TO MAKE THE CHICKEN
- Spray the chicken and the air fryer basket with olive oil.
- Combine salt, pepper and seasoned salt in a small bowl.
- Place chicken in air fryer basket and sprinkle with half of the seasoning mixture.
- Cook at 370 degrees for 10 minutes.
- Remove chicken and flip. Spray with more olive oil and sprinkle with remaining seasonings.
- Place chicken back in the air fryer and cook an additional 10 minutes.
- Remove chicken and brush with sauce and cook for another 2 minutes.
