- 1 large sweet potato, chopped in
- 1-inch pieces
- 1 large yellow onion, chopped
for the marinade:
- ½ c fresh cilantro, loosely packed
- 2 Tbsp olive oil
- 2 tsp minced garlic
- 2 tsp minced ginger
- 2 tsp paprika
- 1 tsp cinnamon
- 1 tsp sea salt
- ½ tsp turmeric
- ½ tsp ground cumin
- ¼ tsp cardamom
- ¼ cup chopped dates (or raisins)
for serving:
- chopped cilantro
- chopped almonds
