Pimenton Potato Wedges With Coriander And Tomato Dip

Ingredients:

  • 400g/14oz very low fat natural fromage frais
  • 1 garlic clove, peeled and finely grated finely grated zest of

  • 6 tbsp finely chopped coriander leaves
  •  2 ripe tomatoes, deseeded and finely chopped

  • For the wedges
  • 4 large potatoes, unpeeled and cut into quarters
  • 4 spring onions, trimmed and finely chopped
  • 3 ripe plum tomatoes, finely chopped
  • 2 red peppers, deseeded and very finely chopped
  • 1 tbsp pimenton or mild paprika
  • 1 tsp dried mixed herbs salt and freshly ground black pepper

  • 110g/4oz reduced fat mozzarella cheese
