Instructions:
Put the precooked ham and chicken in the pan to warm up while you scramble 2 eggs. Add salt and pepper directly to the scrambled eggs and pour over the meat, starting from the middle and letting it spread outward. Cover, and cook at just below medium. When the top is no longer very wet, but not completely cooked through either, add the spinach, more salt, and cheese. Fold in half and let cook until you can see the spinach wilt and cheese melt. Take off the heat, top with tomatoes and avocado, salt and pepper, and cilantro lime dressing I say salt up there 3 times, Eggs, spinach, tomatoes and avocados all need salt, and they take salt at different intervals because they cook at different times and are “layers”. Just keep the salt as a dash for each time.

I also put a Tbl of butter in the pan to melt while scrambling the eggs too
