Mango Possets Recipe

Ingredietns:

  • 4 large mangoes
  • 1 tbsp lemon juice
  • 2 egg whites
  • 2 tbsp artificial sweetener

Instructions:

  • Peel, stone and roughly chop the mango flesh, place in a blender with the lemon juice and process until smooth.
  • Place a tablespoon or two of the purée in the bottom of four chilled dessert bowls, transfer the rest to a large bowl and set aside.
  • In a separate bowl, whisk the egg whites until softly peaked and then gradually whisk in the sweetener until the mixture is shiny and stiff.
  • Carefully fold the egg white mix- ture into the remaining mango and lemon purée until well combined and then spoon this into the dessert bowls.
  • Chill in the fridge for 2-3 hours before serving.
