Low cheese scones!
I’ve been inspired by an old recipe of cheese scones and made this low calories version. Flavours like garlic scape, kale & cheese. it has all been on the menu this summer.

About Time:

  • Prep Time: 20 mins
  • Cook Time: 25 mins
  • Total Time: 45 mins
  • Yield: 8 Scones

Ingredients:

  • 40 Grams Reduced Fat Cheddar Cheese (Utilizing Healthy Extra A), Grated
  • 100 Grams Smash (Dehydrated)
  • 2 Medium Eggs
  • 300 Grams Fat-Free Cottage Cheese with Onion & Chives
  • 2 tsp Baking Powder
  • Pinch of Salt
  • Pinch of Black Pepper
  • Pinch of Dried Mixed Herbs
  • Frylight or low-fat cooking spray

Instructions:

  1. Preheat the oven to 200c/180c Fan/Gas mark 6.
  2. Crack the eggs into a bowl and combine with half of the cottage cheese. Consider using a hand blender for efficient mixing or whisk vigorously at a high speed.
  3. Incorporate the remaining cottage cheese, along with salt and pepper, continuing to blend until a smooth paste is achieved.
  4. Add the dehydrated Smash, baking powder, and grated cheese. Gently fold the ingredients together until a dry, dough-like mixture is formed.
  5. Prepare a baking tray by spraying it with Frylight or lining it with greaseproof paper.
  6. Shape the mixture into 7 scone-like forms and arrange them on the tray. Spritz the tops lightly with Frylight and bake in the oven for 20 – 25 minutes or until the scones turn golden brown.
  7. Allow the scones to cool on a wire rack or plate before serving. Pair them with your preferred filling.

How to make the scones in an air fryer:

  • Follow steps 1-4 from the recipe above to prepare the dough.
  • Shape the Scones:
  • Shape the mixture into 7 scone-like forms.
  • Air Fry the Scones:
  • Preheat your air fryer to 180°C (350°F) for 3-5 minutes.
  • Place the scones in the air fryer basket, ensuring they are in a single layer and not touching.
  • Air fry for 8-12 minutes, or until golden brown and cooked through.
  • You may need to flip the scones halfway through cooking for even browning.
    Cool and Serve:
  • Remove the scones from the air fryer and let them cool on a wire rack for a few minutes before serving.
  • Enjoy with your favorite fillings!
  • Tips for Air Fryer Scones:
  • Don’t overcrowd the basket: Overcrowding will prevent the scones from cooking evenly. Cook in batches if necessary.
