Ingredients:

  • courgette, cut into thick batons
  • 1 carrot, peeled and cut into thin matchsticks
  • 200g/7oz fine beans, trimmed and cut in half Fry Light

  • 2 tbsp light soy sauce salt and freshly ground black pepper
  • 2 eggs
  • 1 tbsp finely chopped coriander leaves
