Ingredients:

  • 3 Weetabix
  • 300ml skimmed milk
  • 2 very ripe bananas
  • 2 large eggs
  • 3 tablespoons sweetener (such as Sukrin Gold)
  • 150g self-raising flour
  • 2 teaspoons mixed spice
  • ½ teaspoon baking powder
  • 150g mixed dried fruit (or sultanas)

Instructions:

  • Prepare Weetabix: Place Weetabix in a jug and pour over milk. Let it soften for 15 minutes until it forms a thick mush.
  • Preheat oven: Preheat oven to 160°C (325°F). Line a 1kg loaf tin with parchment paper or grease well.
  • Combine ingredients: In a mixing bowl, mash the bananas. Whisk in eggs, sweetener, and the softened Weetabix mixture until well combined.
  • Dry ingredients: In a separate bowl, sift together flour, mixed spice, and baking powder.
  • Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, stirring gently to avoid overmixing. Fold in the dried fruit.
  • Bake: Pour the batter into the prepared loaf tin. Bake for 45 minutes, then loosely cover with foil to prevent overbrowning. Continue baking for another 30-40 minutes, or until a skewer inserted into the center comes out clean.
  • Cool and serve: Let the bread cool completely in the tin before slicing and serving.
