Add the oil and seasonings to small mixing bowl and mix well.
Wash the zucchini, then add to a cutting board
Slice the zucchini most of the way through, crosswise, every ½ inch or so. Gently fan the slices apart and using a basting brush, brush the oil mixture into and onto the zucchini.
Add shredded parmesan pieces between the slices of the zucchini.
Place gently in the air fryer basket (you may need to lay them sideways until they soften up and can lay flat) Bake for 5 minutes, flip upright, then bake for an additional 8-10 minutes.
Remove from air fryer and top with remaining parmesan and optional fresh parsley.
