Diet Coca-Cola Chicken or Diet Pepsi Chicken
You can use either Pepsi, Coca-Cola, or a store-brand brand, you don’t have to be specific, they’ll both do the job.

But what if you want to avoid foods that contain aspartame? Unfortunately, most diet drinks contain aspartame as an ingredient, and there are some that contain stevia, but it’s hard to get everywhere.

Diet Coca-Cola Chicken in a Slow Cooker
This recipe also works well in a slow cooker for a roasted chicken or pork roast. I recommend adding a little smoked paprika for a smoky flavor.

Ingredients:

  • Low-calorie cooking spray
  • 4 skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1 red pepper, 1 yellow pepper and 1 green pepper, cut into bite-sized pieces
  • 1 onion, finely chopped
  • 1 330ml can of Diet Coke
  • 200ml hot chicken stock
  • 8 tbsp tomato sauce with onion and garlic
  • 4 tbsp tomato paste
  • 2 cloves garlic, finely chopped
  • 2 tsp gluten-free Worcestershire sauce
  • 1 tbsp dark soy sauce/tamari
  • 1 tsp dried mixed herbs
  • 200g peas Sugary

Instructions:

  1. Spray a large nonstick skillet with low-calorie cooking spray and place over high heat. Add the chicken, peppers, and onions and stir for 5-7 minutes, or until lightly browned.
  2. Add the diet cola, stock, sauce, tomato paste, garlic, Worcestershire sauce, soy sauce, and herbs and stir well. Bring to a boil, then cover, reduce heat to medium-low, and simmer for 12-15 minutes.
  3. Add the sugar snap peas, stir, then increase heat to medium-high. Simmer for another 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
