Delicious Fruit and Spice Bread Pudding

Ingredients:

  • Low-calorie cooking spray
  • 6 slices of white bread (choose a lighter variety for lower calorie count)
  • 25g low-fat spread
  • 40g dried fruit (raisins, cranberries, chopped apricots etc.)
  • 250ml skimmed milk
  • 3 large eggs
  • Sweetener of your choice (amount to taste)
  • Zest of 1 orange
  • 1 tsp mixed spice powder
  • 1 tbsp flour
  • Plain low-fat yogurt or cottage cheese, to serve (optional)
