Ingredients:
- Low-calorie cooking spray
- 6 slices of white bread (choose a lighter variety for lower calorie count)
- 25g low-fat spread
- 40g dried fruit (raisins, cranberries, chopped apricots etc.)
- 250ml skimmed milk
- 3 large eggs
- Sweetener of your choice (amount to taste)
- Zest of 1 orange
- 1 tsp mixed spice powder
- 1 tbsp flour
- Plain low-fat yogurt or cottage cheese, to serve (optional)
