- Preheat your oven to 190°C (375°F) with the fan setting on (or 170°C/338°F without the fan) or gas mark 5.
- In a large bowl, mash the bananas until smooth.
- Add the oats, sweetener, and mashed bananas to the bowl and mix well.
- Stir in the yogurt, eggs, and vanilla extract until everything is fully combined.
- Line a square baking pan with parchment paper for easy removal.
- Pour half of the oat mixture into the prepared pan.
- Sprinkle the chocolate chips evenly over the first layer of oat mixture.
- Add the remaining oat mixture on top of the chocolate chips.
- Bake for 40-45 minutes, or until the bars are lightly golden brown and a skewer inserted in the center comes out clean.
- Take the pan out of the oven and let the bars cool slightly.
- Top the bars with marshmallows and place them under the broiler (or grill) to toast the marshmallows.
- Keep a close eye on them as they can burn quickly!
- Once the marshmallows are golden brown and toasted, take the pan out from under the broiler and let the bars cool completely.
- Slice the cooled bars into 16 squares and enjoy!
Tips:
- For a richer flavor, use brown sugar or honey instead of a granulated sweetener.
- Add a pinch of cinnamon or nutmeg to the oat mixture for a warm spice flavor.
- If you don’t have marshmallows, you can substitute them with chopped nuts or dried fruit.
- Store the leftover bars in an airtight container at room temperature for up to 3 days.
