Delicious Baked Oat Bars with Toasted Marshmallow and Chocolate Chunks (Makes 16 bars)

Instructions:

  1. Preheat your oven to 190°C (375°F) with the fan setting on (or 170°C/338°F without the fan) or gas mark 5.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the oats, sweetener, and mashed bananas to the bowl and mix well.
  4. Stir in the yogurt, eggs, and vanilla extract until everything is fully combined.
  5. Line a square baking pan with parchment paper for easy removal.
  6. Pour half of the oat mixture into the prepared pan.
  7. Sprinkle the chocolate chips evenly over the first layer of oat mixture.
  8. Add the remaining oat mixture on top of the chocolate chips.
  9. Bake for 40-45 minutes, or until the bars are lightly golden brown and a skewer inserted in the center comes out clean.
  10. Take the pan out of the oven and let the bars cool slightly.
  11. Top the bars with marshmallows and place them under the broiler (or grill) to toast the marshmallows.
  12. Keep a close eye on them as they can burn quickly!
  13. Once the marshmallows are golden brown and toasted, take the pan out from under the broiler and let the bars cool completely.
  14. Slice the cooled bars into 16 squares and enjoy!

Tips:

  1. For a richer flavor, use brown sugar or honey instead of a granulated sweetener.
  2. Add a pinch of cinnamon or nutmeg to the oat mixture for a warm spice flavor.
  3. If you don’t have marshmallows, you can substitute them with chopped nuts or dried fruit.
  4. Store the leftover bars in an airtight container at room temperature for up to 3 days.
