Ingredients:

  • 3 tablespoons tomato purée
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon garlic granules
  • 1 medium egg yolk
  • 2 large skinless and boneless chicken breasts, each cut into small pieces
  • 60g of wholemeal roll, crumbled
  • Low-calorie cooking spray
  • Cooked corn cobettes for serving
  • Mixed salad with fat-free natural yogurt for dressing

Instructions:

  1. Mix the tomato purée, Cajun seasoning, garlic granules, egg yolk, and pepper in a bowl.
  2. Add the chicken pieces and stir until evenly coated.
  3. Preheat the air fryer to 200°C.
  4. Roll each chicken piece in the breadcrumbs and place in a single layer in the air fryer.
  5. Spray with low-calorie cooking spray and cook for 8-10 minutes until golden and fully cooked.
  6. Serve with the corn cobettes and mixed salad.

Note:

If you don’t have an air fryer, you can also oven cook the chicken nuggets on a non-stick baking tray at 200°C/fan 180°C/gas 6 for 10-15 minutes.
