Bell Peppers Stuffed with Lamb and Herbs

Ingredients:

  • 2 red bell peppers, halved lengthwise and seeds removed
  • 2 yellow bell peppers, halved lengthwise and seeds removed
  • 200g dried basmati rice
  • Cooking spray (low-calorie preferred)
  • 200g ground lamb (lean, at least 80% lean)
  • 4 scallions, thinly sliced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • 1 teaspoon dried chili flakes
  • 2 ripe tomatoes, diced
  • 140g baby zucchini, cubed
  • Handful fresh coriander leaves, chopped
  • Handful fresh mint leaves, chopped
