Ingredients:

  • 4 very large beefsteak tomatoes
  • salt and freshly ground black
  • pepper
  • Fry Light 2
  • spring onions, trimmed and finely diced
  • 110g/4oz French beans, cut into
  • 1cm/½in dice
  • 1 carrot, peeled and cut into 1cm/½in dice
  • 1 stick celery, trimmed and finely diced
  • 90ml/3fl oz chicken stock made with Bovril
  • 300g/11oz cooked long grain rice
  • 110g/4oz Gruyère or Cheddar cheese, grated
