Watermelon, Cucumber & Feta Skewers with Chilli-Lime Seasoning
These refreshing skewers are a perfect light bite or starter, packed with flavour and super simple to make. They’re naturally low in Calorie, making them ideal for a diet plan!

Ingredients:

  • 8 ounces (approximately 225g) reduced-fat feta cheese, cut into 16 one-inch cubes.
  • 2 mini cucumbers, cut into 32 thin slices
  • 500 grams watermelon, cut into 32 one-inch cubes
  • 16-32 fresh mint leaves (cut in half if very large)
  • Chilli-lime seasoning to taste.
  • 16 wooden skewers (4-7 inches long)

Instructions:

  1. Prepare the fruit and vegetables: Start by carefully slicing the rind off the watermelon and cutting the flesh into 32 one-inch cubes. Next, slice the mini cucumbers into 32 very thin rounds.
  2. Cut the feta: Cut the block of reduced-fat feta cheese in half lengthwise, then carefully cut it into 16 one-inch cubes. For cleaner cuts, ensure the cheese isn’t too cold, as it can be more prone to crumbling.
  3. Assemble the skewers: Begin assembling each skewer by placing a fresh mint leaf at one end. Then, thread on a cube of watermelon, followed by a slice of cucumber. Very carefully, thread on a cube of feta cheese. Add another cucumber slice, then another watermelon cube, and finish with a mint leaf.
  4. Tip: If you have particularly large mint leaves, cut them in half and fold them neatly so they fit well on the skewers.
  5. Arrange and season: Once all 16 skewers are assembled, arrange them on a serving platter.
  6. Serve: Just before serving, sprinkle generously with the chilli-lime seasoning. It’s important to do this at the last minute, as the seasoning can draw moisture from the watermelon and feta, making the skewers watery if left too long. For those who like an extra kick, you can offer a small dish of additional chilli-lime seasoning on the side.
