Ingredients
- 2 eggs
- 1/2 tin baked beans
- 4 bacon medallions
- 2 mushrooms sliced
- 20 g reduced fat cheddar cheese grated
- low calorie cooking spray
Instructions
- If using the oven pre-heat to 190°C.
- Lightly spray a 2 portion ovenproof serving dish or 2 individual ramekins with low calorie cooking spray.
- Heat a frying pan over a medium heat, spray with low calorie cooking spray, then add the bacon and mushrooms. Gently fry until they start to colour.
- Arrange the bacon and mushrooms evenly in serving dish.
- Spoon the beans over the bacon and mushrooms.
- Make a well with the spoon and crack the eggs on the top of ingredients.
- Sprinkle the egg with some salt and pepper & top with cheese.
- Either bake in the preheated oven for 15 – 20 minutes or microwave on high for at least 60 – 90 seconds (cover with cling
- film if you cook in the microwave). Make sure the egg is cooked as you like it and serve.
- Bake:
- Oven: Bake for 15-20 minutes, or until the eggs are set and the cheese is melted and bubbly.
- Microwave: Microwave on high for 60-90 seconds, or until the eggs are cooked through. Cover with microwave-safe plastic
- wrap for the last 30 seconds to prevent splattering.
- Serve: Let the bakes stand for a few minutes before serving. Enjoy!
