Ingredients:
- 12 lamb chops, French trimmed
- 4 tbsp finely chopped rosemary
- 2 tbsp finely chopped thyme
- 1 tbsp crushed coriander seeds
- 1 tsp crushed cumin seeds
- 2 tsp garlic salt
- Freshly ground black pepper
- Chopped parsley, to serve
- 1/2 cup mushrooms, sliced (such as button or portobello)
- 1 cup cherry tomatoes, halved
- Lemon wedges, for serving
- For the salsa:
- 4 plum tomatoes, quartered, deseeded and finely chopped
- 4 tbsp drained and chopped jalapeno peppers in vinegar
- 2 tbsp jalapeno vinegar from the jar
- 1 small onion, peeled and finely chopped
- A small handful of coriander, finely chopped
- Sea salt
Instructions:
- Prepare the Lamb:
- In a bowl, combine rosemary, thyme, coriander seeds, cumin seeds, garlic salt, and black pepper.
- Toss the lamb chops in the spice mixture to coat evenly.
- Air Fry the Lamb:
- Preheat your air fryer to 390°F (200°C).
- Arrange the lamb chops in a single layer in the air fryer basket.
- Air fry for 6-8 minutes per side, or until cooked to your desired doneness.
- Note: Cooking times may vary depending on the size and thickness of the lamb chops and your air fryer model.
Make the Salsa: - Combine all the salsa ingredients in a bowl.
- Season with sea salt to taste.
