Ingredients:

  • 12 lamb chops, French trimmed
  • 4 tbsp finely chopped rosemary
  • 2 tbsp finely chopped thyme
  • 1 tbsp crushed coriander seeds
  • 1 tsp crushed cumin seeds
  • 2 tsp garlic salt
  • Freshly ground black pepper
  • Chopped parsley, to serve
  • 1/2 cup mushrooms, sliced (such as button or portobello)
  • 1 cup cherry tomatoes, halved
  • Lemon wedges, for serving
  • For the salsa:
  • 4 plum tomatoes, quartered, deseeded and finely chopped
  • 4 tbsp drained and chopped jalapeno peppers in vinegar
  • 2 tbsp jalapeno vinegar from the jar
  • 1 small onion, peeled and finely chopped
  • A small handful of coriander, finely chopped
  • Sea salt

Instructions:

  1. Prepare the Lamb:
  2. In a bowl, combine rosemary, thyme, coriander seeds, cumin seeds, garlic salt, and black pepper.
  3. Toss the lamb chops in the spice mixture to coat evenly.
  4. Air Fry the Lamb:
  5. Preheat your air fryer to 390°F (200°C).
  6. Arrange the lamb chops in a single layer in the air fryer basket.
  7. Air fry for 6-8 minutes per side, or until cooked to your desired doneness.
  8. Note: Cooking times may vary depending on the size and thickness of the lamb chops and your air fryer model.
    Make the Salsa:
  9. Combine all the salsa ingredients in a bowl.
