Apple Cinnamon Pancakes

Thanks to the filling power of oats, blitzed into a fine flour, these pancakes are much more satisfying than traditional ones, yet they are far lighter in calories. Combined with spices and fruit, they are a really indulgent and delicious way to start the day.

Delicious Apple Pancakes – no healthy extras need for these. So perfect to enjoy any time of day.

Ingredients:

  • 60g Oats
  • 2 Apple, peeled/cored and grated
  • 1 tsp cinnamon
  • 3 tsp granulated sweetener, plus an extra pinch
  • 2 large heaped spoonfuls of Fat Free Greek Yogurt
  • 1 level tsp baking powder
  • 1 tsp of vanilla extract
  • 120 cottage cheese

Instructions:

  • Preheat the oven to 180 °.
  • Peel the apples and cut them in 4.
  • Grate 4 pieces of apples with a grid (not too fine).
    Cut the remaining 4 pieces into cubes.
  • In a bowl, combine the grated apples, oatmeal, yogurt and yeast.
  • Add half the cinnamon.
  • Add 2 tsp of sweetener
  • To mix everything.
  • Pack the mixture into 4 molds of 9 cm; I used pastry circles.
  • Put in the oven for 20 min.
  • Remove from oven, unmold and let cool.

For the rest I do it my way:

  • In a pan fitted with a baking sheet, gently brown the diced apples and the vanilla aroma.
  • In a salad bowl, mix the fromage blanc with the remaining tsp of sweetener
  • Pour this mixture over the cooled bottoms.
  • Scatter the diced apples on top then sprinkle with the remaining cinnamon (or other spices)
  • Serve and Taste!!!!!!
