Red Chicory Red Onion And Watercress Salad

Here’s a simple salad that’s great either on its own or eaten as a main course accompaniment.

  • SERVES 4
  • Preparation time 5 minutes

Ingredients:

  • 2 heads of red chicory
  • 2 red onions, peeled, halved and thinly sliced
  • 225g/8oz watercress
  • 6 tbsp fat-free salad dressing
  • salt and freshly ground
  • black pepper

Instructions:

  •  Wash and separate the chicory leaves and place in a large salad bowl with the red onion and watercress.
  • Drizzle over the dressing and toss to mix well.
  • Season to taste and serve immediately.
