Here’s a simple salad that’s great either on its own or eaten as a main course accompaniment.

- Preparation time 5 minutes
Ingredients:
- 2 heads of red chicory
- 2 red onions, peeled, halved and thinly sliced
- 225g/8oz watercress
- 6 tbsp fat-free salad dressing
- salt and freshly ground
- black pepper
Instructions:
- Wash and separate the chicory leaves and place in a large salad bowl with the red onion and watercress.
- Drizzle over the dressing and toss to mix well.
- Season to taste and serve immediately.
